The Waterhouse Bar and Terrace really is an exceptional venue located in one of the cities iconic buildings and is aptly named after the Victorian architect who designed the Metropole back in 1890.  Located within the lobby area of the Brighton Hilton Metropole Hotel, this destination cocktail bar boasts the most elaborate of settings with some of the most stunning views in the city, looking directly over the seafront area and the famous West Pier.

A Luxury Refurbishment, with New Exciting Menus

The Hilton Brighton Metropole has opened its doors once again as the very best destination bar & terrace in Brighton. The ‘Metropole lounge’ and bar has recently completed a £350,000 total refurbishment to bring the hotel and the city the most luxurious of surroundings.

The Water House Bar and Terrace, Brighton bar and restaurant The Waterhouse Bar & Terrace is named after the famous Victorian architect who designed the hotel in 1890 and worked with the then Queen Victoria designing the capitals National History Museum.  Waterhouse  was one of the country’s leading architect’s, so it seemed only right to place his name in the heart of the new terrace and Bar that still has original mouldings and plant urns designed by the man himself, Alfred Waterhouse.

The design offers soft leather alcove seating with mood lighting, solid oak and Victorian mosaic flooring with sumptuous fully lined velvet drapes. The solid painted wood panelling in deep grey and deep filled carpet in lays in black and grey really do add a touch of class and luxury. Artwork to honour the Mod era in Brighton, seems to capture the sixties era, even the cocktail menu offers guests to sip on the Quadrophenia.

Signature Cocktails

French lavender is grown, as is mint and lemon sage all of which are key ingredients for just a few of the Waterhouse signature cocktails, the mixologists are proud of their creations which include earl grey martini served in a glass tea pot and the Brighton rocks! served with Brighton stamped rock, to name just two.

The terrace is filled with parasols and seating, it is a great place to people watch which also offers unrivalled sea views. Drink champagne such as Pommery brut royal, Bollinger, and of course Louis Roederer Cristal, the extensive brandy, Cognacs and Armagnac’s including Hennessy Paradis. These served on the terrace with a The Hilton Brighton Metropole Hotel, the Water House Barclassic cigar at sunset could almost be the end to a perfect day, week or stay…

Their Executive Chef  and his brigade bring the finest mussels with lime leaf & lemongrass broth, quail eggs in chick pea and goat’s cheese, seafood chowder and the most favourable wok fried squid.

Open from 08.00 daily until very late, the Waterhouse Bar and Terrace offer delicious breakfast, Costa coffee and traditional afternoon cream teas all served on their three tier stands with Twining’s loose leaf teas.

    Great for a special night out and you can get carried away here with their great cocktails. Didn’t actually eat here but can recommend the drinks!
